Dinner

In my opinion, dinner is the easiest meal of the day. I have yet to come across a recipe that cannot be converted to gluten-free. But some recipes work out better than others and some ingredients are much easier to work with.
All meat, fruit, vegetables and legumes are naturally gluten-free. There are also quite a few starches and grains that are safe as well as some very good gluten-free pastas. Combine these ingredients with some substitution starches such as corn starch or potato flakes, and you have a wonderful meal.
Here is a list of substitutions that you may find helpful:
Instead of breadcrumbs, use:
GF breadcrumbs (you can save your bread crusts and ends and dry them in the oven)
GF oatmeal
GF crackers-crumbled
potato flakes
crushed corn flakes
cream of rice
cooked rice
crushed cornpuffs
crushed potato chips
To coat meats in place of flour:
cornstarch
rice flour
corn flour
tapioca flour
GF cooking ingredients: Dated 8/10/19
-Most Soy Sauce's contain gluten. But currently, La Choy makes a gluten-free Soy Sauce that is available in the grocery store. There are a few others such as San-J, but you may have to get it at a specialty store.
-Worcestershire Sauce is usually made with Soy Sauce and therefore a GF no-no. But French's currently makes a Worcestershire Sauce that is Gluten-free. I have also read that Lea & Perrin's Worcestershire Sauce is Gluten-Free.
-Most Ketchup is fine but be sure to read the label or call the company if there is any doubt. If you think that you are sensitive to vinegar, Heinz ketchup has vinegar but it is distilled from corn, so there should be "0" gluten.
-Mustard is a little more iffy. French's mustard is gluten-free and so is Grey Poupon but some Celiacs have reported problems with the vinegar in Guldon's Spicy Brown Mustard.
-Hellman's Mayonnaise is safe as well as Miracle Whip dressing.
-Bouillon is another tricky item. Herb Ox makes gluten-free chicken and beef bouillon cubes. Knorr bouillon is also gluten-free and they label all gluten containing ingredients on their packages. But my personal favorite is the Better than Bouillon brand. They are stored in the refrigerator and easy to use.
-Soup mixes are great for cooking but many of them contain gluten. Lipton onion soup mix is a great and very versatile soup mix. Most reports are that it is gluten-free but it has been on and off the list over the years. Currently, I think it is on the list. Thankfully, Knorr vegetable soup mix is currently gluten-free. This is also a very versatile soup mix as well as the base for my favorite vegetable dip.
